Catch It: Chef Farnabe at Petrossian

What makes a distinct dining experience for me? It is the cuisine, the atmosphere and conversations with someone special. Usually, though, we don’t get to meet the people who work behind the scenes to create these unforgettable meals. Several weeks ago, I sat with Chef Richard Farnabe at the famed Petrossian restaurant at 182 West 58th Street, New York, NY 10019. The French-born chef has a resume par excellence, punctuated with the names of restaurants that draw gourmands and stars to New York from around the world— Restaurant Daniel, Jean Georges, Lotus, and the Soho Grand Hotel and The Tribeca Grand Hotel, among others. Chef Farnabe is charming as he speaks to me with a radiant smile about his home away from home—Petrossian.

What makes a chef?

Passion. You have to be passionate for what you do or you will never be a chef. You have to love what you do.

What do you like about being a chef?

For me, teaching people in my kitchen how to be a chef, showing my passion, and demonstrating the techniques that will help them grow.

What is a perfect day in the kitchen?

Every day is a perfect day. I love waking up and coming to work. I love my job. I love what I do.

How long have you been a chef?

Thirty-two years.

How did it come about?

I started when I was twelveyears-old. I am Parisian-born. As a young kid, I was cooking for my brother after school because my mother was working late. I got to love cooking, and found a passion for cooking.

Where did you acquire your experience in French cuisine?

I went to school in France. I worked for a wonderful chef for ten years—Jacques Maximin.

What makes Petrosssian a classic French restaurant?

Petrossian has been an institution since 1920. They have the best caviar in the world. Of course, we encapsulate the French technique in a classic restaurant like Petrossian with an American flair.

Petrossian is an elegant restaurant. Is there one word you can use to describe what it is like being in your kitchen?

My kitchen is like the restaurant: You can eat on the floor. My kitchen is spotless. Everything has to be spotless. I am OCD about it.

Is there a secret to making pastries?

Pastries are like chemistry. You have the ingredients: flower, eggs and sugar, and everything is precise. When we create a new pastry, we just try and try again to get it to perfection.

Do you make your croissants daily?

Yes, every day. We have a gentleman who has been making our croissants for fifteen years. He is here at five o’clock in the morning.

What advice would you give to a young person who wanted to become a chef?

Be patient in learning. In France, we go to school for three years. Here, some people attend a culinary school for three months or six months. They watch cooking shows on television and think they can be a chef. Cooking is about patience, because you don’t learn everything overnight. It is precise. So, be patient and understand that every dish is different. There are hundreds of sauces and different ways to cook fish and vegetables. I say, learn the technique and relax. Being a chef is not only cooking. It is managing the kitchen, the restaurant and, at the end of the day, you have to make money.

Do you like caviar?

What is there not to like? We have tourists from Russia, Japan, Europe, and of course, New Yorkers who come for our caviar.

Do you cook at home for your family or go out?

I cook. I love going to the market and making a nice meal at home.

Catch It: Sweeter Still Than This

During the Valentine’s Holiday, I am drawn to the poetry in Sweeter Still Than This by Adah Louise Sutton (Copyright 1905 by The Saalfield Publishing Company).

I remember a time I visited my Aunt Vinnie, who owned a summer place in Cape May, New Jersey. I stopped by a vintage shop on my way to the beach, and I bought Sweeter Still Than This. The book was tattered with age; however, the poetry, the illustrations (by Carll B. Williams) were exquisite.

On the first page are words from eminent poet Lord Byron that inspired the author.

“But sweeter still than this, than these,

than all,

Is first and passionate love,—it

stands alone;

Like Adam’s recollection of his fall,

And life yields nothing further to recall.”

Sweeter Still Than This is a romantic treasure. And another romantic pleasure I enjoy is a restaurant in Lower Manhattan: Mamo. On Valentine’s weekend, and all year, Mamo is urbane and cozy and scrumptious.

Catch It: Gotham Scoop 2016

For the start of the New Year, and years gone by, I relish the joy of walking throughout New York City and writing about my adventures in all things: Coffee, Cuisine and Conversations. Each experience is unexpected manna from heaven.

During the holidays, my boyfriend and I had dinner at Lafayette (380 Lafayette Street, New York, NY 10003) in the heart of The Village. He ordered grilled hanger steak and new potatoes with romesco sauce, and I the roasted halibut, braised endive, and celery root with sauce bordelaise.

Too bad it is raining, he said.

I smiled, because I love the rain—as I savored the moment.

We had an excellent meal and a lovely evening at Lafayette.

Catch It: New York Culture, Ukrainian Style

Weeks ago, my friend Henry and I were walking along the Lower East Side. We came upon The Ukrainian Museum. It is located at 222 East 6th Street (between 2nd and 3rd Avenue, New York, NY 10003). At the same time, we were thinking of dinner. That’s when I thought to contact Sergiy. He and his family are from the Ukraine. Below is our conversation.

Hi Sergiy, could you recommend an authentic Ukrainian restaurant in the East Village?

SERGIY

Hey Wanda, I like Veselka on 2nd Avenue and E. 9th Street. It is a famous Ukrainian dinner spot in the East Village. It is open 24/7 and the food is great, especially Borscht (red soup), Vereniki and Olivye (potato salad). It is the best spot to go for a burger after a long night of drinking and dancing at a club. http://www.veselka.com

It is Holiday time in the city, what about in the summertime?

SERGIY

Another spot in the East Village is called Cloister Café. I usually go there in the summertime to sit outside and eat. The spot itself, my friend called it Lvivsky Dvorik due to the fact that the entrance and the outside sitting place reminds us of a city of Lviv in Ukraine. (This is where my family is from and where my mother, brother and I were born). It has a great atmosphere, and during the summer evenings, it’s perfect to sit down with your friends and have a good meal. http://www.cloistercafe.com

Another restaurant is not in the East Village, but is a great spot: “XO Creperie” in Brooklyn. In the summertime, I like sitting outside on the balcony, listening to the band. Inside, it is cozy and elegant. My favorite meals are the salmon, tuna tartare and their flavorful crepes. http://www.xocreperie.com

Lastly, is there one other restaurant you could recommend?

SERGIY

“Otafuku.” My mother and I accidently heard about it on a NY1 review of places in the city. It is a takeout Japanese restaurant. It is small and delicious. You can basically order everything from one visit. The squid rolls/balls are very interesting and for desert, I recommend the banana with Nutella and banana “medetai”. (A medetai is similar to a waffle but is shaped like a red snapper, which means good luck.). http://www.otafukuny.com

Catch It: Angel of Harlem

It happened one Saturday night, three weeks ago, when two friends and I entered the restaurant, Angel of Harlem. This Upper-Manhattan eatery, bar and lounge is located at 2272 Frederick Douglass Blvd. (FDB) at 122nd Street, New York, NY 10027.

Angel of Harlem is a Latin-Caribbean restaurant where good friends meet for good food and good music. It felt like a celebration throughout the evening with: the serving staff gliding across the voluminous space with platters of delight, the rhythmic sounds from the D.J. “Just Dimy and wide-eyed smiles in the fashionable eatery on Eighth Avenue.

Right away, our waiter approached the table and introduced himself, “Hi, I’m Afika, welcome,” placing the menus on the table. “Would you like to order cocktails first?”

“No, could you come back?” I asked, staring down at our choices.

“Sure,” he replied, “I’ll be right back.” Adrienne, Kelli and I glanced at some of their delectables.

Cocktails: Flirtini (Belvedere, Strawberry, Mango Puree, Lime, Basil); Caribbean Queen (Wray & Newphew Rum, Guava, Mango, Sorrel, Ginger, Nutmeg); Old Thymer (Jack Daniels, Ginger Syrup, Angostura Bitters, Thyme).

Starters: Guacamole, Salsa & Chips; Pepper Prawns (Scotch Bonnet, Cilantro, Citrus with Plantain Chips); Short Rib Nachos (Braised Short Rib, Three Cheese Sauce, Sour Cream, Guacamole, Pico de Gallo, Corn Tortillas); Guava BBQ Wings (Zesty Remoulade Sauce).

Mains: Latin Flatbread (Herb Bechamel, Rock Shrimp, Pineapple, Spanish Ham, Queso Fresco, Mozzarella); 8th Avenue Burger & Yucca Fries (Short Rib, White Cheddar, Avocado Mayo, Fried Onion, Manchego Cheese); Ginger Glazed Salmon (Ginger-Honey Glaze, Roasted Sweet Potato Wedge, Sautéed Kale).

Just in time, our waiter returned.

“I’ll have the Ginger Glazed Salmon,” Adrienne said, “and a glass of Cabernet Sauvignon.”

“I can’t decide,” I added.Everything looks delicious.”

“Why don’t we share the Guava Barbecue Wings,” Kelli suggested, “for starters?”

And the night was a symphony of sauces, smiles and good spirits.

Several hours later, we were preparing to leave. I noticed a sign over the open kitchen: “Harlem State of Mind,” with three men making their magic in front of the stove.

“Hi, what are your names? My friends and I enjoyed our meals.”

“Troy and Johnny and Jesus,” one said; all chefs grinned.

In same moment, I saw our waiter, Afika. “Is the manager here? I would like to tell him how lovely everything was.”

“Sure, I will bring him over.”

“Before you do,” Adrienne interjected, “I would like to order the Short Rib Nachos—to go.”

The music was bouncing in the background, people at the bar were swinging to the beat and gazing at the television screens. Other patrons were walking about and taking in the photography exhibit on Cuba by Aurora Fiorentino Scerbo.

Suddenly, Afika approached us. “This is Casimir, our manger.”

“Hello,” he said, extending his hand. “I heard you ladies like Angel of Harlem.”

“Yes,” I remarked. My friends and I decided we will come back.”

“Great, we really like being here in the neighborhood. We have great team. Our customers tell us they like the menu, the ambience and our style of Latin-Caribbean cuisine.”

“Congratulations, and everyone has been nice,” I responded. “Right away, from being greeted by Andrean, the hostman, to our waiter, and the music—it’s splendid.”

Mr. Casimir extended his hands to us all, displaying a gracious-smile.

Catch It: Earth Café

Last week, I strolled into the Earth Café. It is located at 2580 Broadway, New York 10025, on the north side of West 97th Street. The décor is simply charming: high ceiling, white brick wall, wooden ceiling fan, teal colored-chairs, and French doors. As I walked up to the barista, there were samples of cakes and brownies. Each bite was delicious.

“What is this cake?” I asked the young barista.

“It is Coconut Loaf. We bake it fresh,” he said smiling. “Would you like a slice?”

“I would.”

“What about coffee?”

“I just had an espresso, but next time,” I replied. “What a delightful café, I think it is the kind of place one becomes devoted to.”

I sat at a table and stared at the elegantly proportioned café on the Upper West Side. My Coconut Loaf was divine. And when I had finished eating, I thought of taking a slice to go. Yet, I stood up to leave, humming to the Bossa Nova soundtrack.

“Thank you,” I said, waving to the barista. “What is your name?”

“Yadin,” he said, “I will tell the chef that you enjoyed the Coconut Loaf.”

Catch It: Donna Bell’s Bake Shop

Where is the fun in passing by a bakery, peering through the window, and just smiling at the creamy moist homemade Classic White Cake, Carrot Cake, Old-Fashioned Chocolate Cake, or chocolate cookies, cupcakes, and biscuits? While growing up in the south, family dinners were heavenly, and desserts were scrumptiously supreme. There was no guilt, I simply asked, “May I have another slice, please?”

It happened unexpectedly. I strolled from a creative meeting about a new project, and I was in the vicinity of Midtown on the West Side of Manhattan. I entered Donna Bell’s Bake Shop; and my big dark brown eyes blinked more than once at the desserts.

Why not?” I said, glancing at the frostings on food I adore.

I treated myself to a delicious cupcake, stirring reminiscences of my sister’s famous Classic Pound Cake with Sugar Icing. And I enjoyed every bit of the pleasure of home cooking from the homeystyle café.

Catch It: Lincoln Center

A week ago Thursday, at the New York Public Library for the Performing Arts, I was among hundreds of visitors at Sinatra: An American Icon, an exhibition curated by the GRAMMY Museum in Los Angeles.

According to Robert Santelli, the Executive Director of the GRAMMY Museum, “This year we celebrate the Frank Sinatra Centennial. It examines one hundred years of Sinatra’s legacy. Never-before-seen photos, family mementos, rare correspondence, personal items, artwork, and, of course, music make up the exhibit. Most of the pieces come directly from the Sinatra family and have never been on public display before.”

The exhibit, which launched in March, ended on September 4th, but Lincoln Center hasn’t lost the Sinatra flavor. Strolling along, I could feel Sinatra’s soulful and smooth lyrical voice, as he greeted his audiences in a plaid Fedora hat, holding a crystal glass of Jack Daniel’s Sinatra Select.

After a noontime five-mile walk on Riverside Drive, I strolled upon Crêpes & Délices on the Upper West Side. I glanced through the window, glimpsed the menu, and guessed it might be a lovely treat. There I was Saturday past, eating a Honey and Almond Crêpe, drinking an Americano, and reading The House of Mirth by Edith Wharton.

My meal was perfect, the place was just right, and yes, I was happy.
